Ingredients to make Microwave Mushroom Corn Curry

  • 200 gm mushrooms-each cut into 4
  • 1/ cup corn
  • 1/2 cup peas
  • 1/4cup kaju
  • 1/2 cup curd
  • 4 tbsp oil
  • 1 tbsp ginger-garlic paste
  • 2 onions (paste)
  • 1/2 tbsp jeera
  • 1/2 tbsp red chilli
  • 1/4 teaspoon haldi
  • 1/2 tbsp garam masala
  • 1 tbsp kasoori methi
  • 2 tomatoes- pureed and strained
  • 2 cloves
  • 2 choti elaichi-crushed together
  • salt to taste

How to make Microwave Mushroom Corn Curry

  1. Grind cashews and curd to a paste.puree tamatoes .strain tomato puree and keep aside.
  2. Mix oil jeera onion ginger garlic paste red chilli haldi garam masala and salt in a microwave bowl.
  3. Mix well and microwave for 5 minutes
  4. Add pureed and strained tomatoes and kasoori methi. Microwave for 4 minutes
  5. Add 1 cup water and mushrooms.Microwave covered for 5 min
  6. Add corn peas crushed laung and choti elaichi
  7. Add curd kaju paste
  8. Uncovered and microwave for 3 minutes
  9. Serve hot

My Tip:

Instead of kaju, you can use 2 tbsp roasted chana powder
