ABOUT Corn Muffins with Sarso da Saag RECIPE

An interesting twist to the regular makai ki roti.Corn flour or makai atta is definitely tough to handle, the rotis are fragile and break. So I decided to give it a different form where there is no compromise in the taste and makes boring lunch interesting and wholesome.

Ingredients Serving: 2

  1. For Corn Muffins
  2. Makai atta - 1/2 cup
  3. Refined flour- 1/4 th cup
  4. Yoghurt- 1/4 th cup - 1/2 cup
  5. Baking pd.- 1/2 tsp
  6. Baking Soda- 1/4 th tsp
  7. Oil - 1 tsp
  8. Salt - a Pinch
  9. For Sarso da Saag
  10. Sarso saag- 3- 4 bunches
  11. Paalak Saag - 1 bunch
  12. Onion - 2(chopped)
  13. Garlic - 4-5 cloves
  14. Ginger- 1 small pc.
  15. Green Chillies - 2-3
  16. Turmeric pd.- 1 tsp
  17. Cumin pd.- 1tsp
  18. Salt - as per taste
  19. Tomatoes - 2(chopped)
  20. Ghee - 2tsp

Instructions

  1. First pressure cook the saags with garlic ,ginger,salt,chillies.
  2. Cool,strain and blend to a puree
  3. In a pan ,heat ghee, add chopped onions,fry till slightly translucent.Now add the saag puree,stir continuously
  4. Add turmeric,cumin ,salt and cook for a while ,finally add tomatoes and cook till oil starts leaving the sides.Add a little water if it turns too dry.Keep aside.
  5. For the muffins,add soda to yoghurt and leave for 5 mins.
  6. Mix makai ka atta, flour, baking powder, sieve 2 - 3 times.
  7. Now add the yoghurt mix to the atta mixture.Mix well,the batter should not be very watery nor thick.You can add more yoghurt if its too thick.
  8. Finally add oil and salt and mix well
  9. Spoon 2 tsp of the saag into a muffin mould .Pour the atta mixture on top.
  10. Bake at 180 degrees C in a preheated oven for 20 - 25 mins
  11. Yummy corn muffin with sarso da saag is ready
