Mint Rice

Ingredients to make Mint Rice

  • Boiled rice -1 cup
  • Chopped and cleaned mint leaves -1/2 cup
  • green chillies -6 - cut into two
  • Fresh coconut - 4tsp
  • Whole Bengal gram/urad dal - 1 tsp
  • Whole coriander seeds -1/4 tsp
  • Chickpea gram/chana dal -1 tsp
  • mustard seeds - 1/4 tsp
  • curry leaves -1 stem
  • Dry red chilli -2
  • salt as per your taste
  • oil -3 tsp
  • tamarind pulp -2tsp

How to make Mint Rice

  1. Saute urad dal, coconut, whole coriander seeds, green chillies in 1/2 tsp of oil.
  2. Then saute mint leaves till the raw aroma goes
  3. Grind the pulses and coconut along with green chillies first coarsely. Then add the sauteed mint leaves and tamarind to it and grind again coarsely. Add salt to it
  4. Now mix this with cooked rice and keep it aside
  5. In a kadai heat 2tsp of oil and when the oil is heated add mustard seeds when it crackles add chickpeas, curry leaves and at the end add whole red chilli. Pour the tempering on rice
  6. Check the salt and serve.
