Fried Paneer Pulav

Ingredients Serving: 3

  1. Basmati Rice - 2 cups
  2. Paneer - 250 gms (cut into cubes fried with chilli powder)
  3. Onions - 2
  4. Carrots – 1 cup
  5. French beans – 1cup
  6. Green peas – ½ cup
  7. If using frozen mix vegetables – 1 ½ cup
  8. Ginger grated – 2 tsps
  9. Green chillies - 2
  10. Asafoetida - 1/2 teaspoon
  11. Bay leaves - 3-4
  12. Cumin seeds – 1 tsp
  13. Everest Shahi Pulao/Biryani Masala – 2 tsps
  14. Salt as per taste
  15. Oil – 4-5 tbsps
  16. Fried cashews for garnishing.

Instructions

  1. Wash the paneer and then cut into medium sized cubes, fry them lightly with red chili powder (don’t deep fry) and keep aside.
  2. Wash the rice and soak in water for about half an hour.
  3. Chop the vegetables, I used frozen mix vegetables pack which contains beans, carrots, corns and peas.
  4. Make a paste of one onion, 2 green chilies and the ginger. Chop the other onion and keep aside.
  5. In a pan, Add 2 tbsps oil, add cumin seeds and bay leaves. When the cumin seeds begin to fry, add the chopped onion and fry until it turns transparent,
  6. Add the onion-ginger-chilly paste, add the 'Shahi Pulao/Biryani Masala' and fry until the oil separates from the masala.
  7. Add the vegetables, fry for about 5 - 7 minutes.
  8. Drain the water from the soaked rice. Add in the soaked rice and mix with the masalas and vegetables, add salt and fry for 3-4 minutes.
  9. Add in the fried paneer cubes.
  10. Mix lightly without squashing the paneer.
  11. Add 3 cups water and pressure cook up to 3 whistles.
  12. Open the cooker, stir the Pulao gently and serve hot.
