Ingredients to make green pea soup

  • 2 tbps - butter
  • 2 cups - chopped leeks
  • 1 cup - onion chopped
  • 4 cups - vegetable stock
  • 5 cups - green peas
  • 2/3 cup - mint leaves
  • 2 tbps - salt
  • Pepper as per taste
  • 1/2 cup - Crème fraîche
  • 1/2 cup - chopped chives
  • Croutons - as many as required.

How to make green pea soup

  1. Heat the butter in a large saucepan, add the leeks and onion, cook over medium-low heat for 5 to 10 minutes, until the onion becomes tender.
  2. Add the vegetable stock, increase the heat to high, bring to a boil. Add the peas and cook for 3 to 5 minutes until the peas become tender
  3. Switch off the heat, add the mint leaves, salt and pepper. Set aside to cool.
  4. Puree the soup in batches. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives.
  5. Taste for seasoning. Add in salt and pepper as per taste. Serve hot with croutons

My Tip:

You can use frozen peas for quick cooking. Crème fraîche is a soured cream containing 30–45% butterfat.
