Ingredients Serving: 2

  1. Rice 150 gms
  2. Mushrooms 100gms
  3. Paneer 100 gms
  4. Mint leaves few washed
  5. Coriander leaves washed few
  6. Onion 2 large cut length wise
  7. Green chilli 1
  8. Ginger garlic paste 1 tbsp
  9. Green peas 1/4 cup
  10. Spices dry-
  11. Biryani masala 2 tsp
  12. Chilli powder 2 tsp
  13. Turmeric powder 1 tsp
  14. salt as per taste
  15. Cloves 2
  16. Cardamom 1
  17. Bay leaf 1
  18. Coriander powder 2 tsp
  19. Cinnamon 1 inch long piece
  20. Ghee 2 tsp
  21. Oil 2 tsp
  22. Yoghurt thick 1/2 cup
  23. Garam masala powder 1/4 tsp

Instructions

  1. Cut mushrooms in halves , slice onions length wise
  2. In a big bowl add yoghurt , turmeric powder 1 tsp , ginger garlic paste 1 tsp , coriander powder 1 tsp , salt , chilli powder 1 tsp , a pinch of kasuri methi
  3. Mix well
  4. Now add paneer pieces and mushrooms
  5. Wash rice , soak in water for 20 mins , drain and keep aside for some time
  6. Heat oil and ghee , add cloves , cardamom and cinnamon
  7. Add rice
  8. Saute for 1 min
  9. Add 300 ml water , (double of rice)
  10. Cook rice 2/3 , do not over cook
  11. Discard extra water
  12. Heat a kadai or nonstick pan , add oil and ghee , once oil is hot add onion slices , bay leaf , onions , green chilli
  13. Also add ginger garlic paste
  14. Add remaining turmeric powder , biryani masala , chilli powder , coriander powder and salt
  15. Add tomato puree
  16. Mix well , saute for 5-6 mins
  17. Add marinated paneer and mushrooms
  18. Mix them and saute for some time
  19. Add blanched green peas
  20. Add mint and coriander leaves
  21. Mix and saute for 3-4 mins
  22. Now we will start layering , first layer is the mushrooms and paneer , second layer is cooked rice
  23. Put again paneer and mushrooms as third layer
  24. Now put rice again as fourth layer
  25. Cover and cook for 5-6 mins in very low heat , sprinkle some garam masala
  26. Healthy and tasty biryani is ready
  27. Pack it for lunch with raita and salad for a wholesome meal
