Ingredients Serving: 2

  1. 1-1/2 cup Rice
  2. 3-4 Amla chopped finely into slices by removing the seeds
  3. A small piece of jaggery
  4. 1 – Onion finely sliced
  5. 1 green chili slit
  6. Cumin seeds a pinch
  7. Salt to taste
  8. 1/4 tsp turmeric powder
  9. 1/4 tsp red chili powder
  10. Curry leaves a few
  11. Ghee as required or 2tbsp
  12. Peanuts -1 tsp
  13. A handful of chopped cashews, almonds and raisins
  14. A Little Coriander and Mint Leaves

Instructions

  1. Method Wash and soak rice for 10 to 15 minutes based on the rice being used as per instructions
  2. Heat ghee in a thick bottom pan and add cumin seeds, curry leaves, then add onions and chopped cashews, almonds and raisins
  3. Fry until they turn light golden. Add in the slit green chili, and fry well.
  4. Then add in the chopped amla pieces and fry for 2-3 minutes. Then add in turmeric powder, salt and red chili powder mix well and then add little water and cover and cook on low flame for 6-8 minutes till soft and then add in jaggery .
  5. Then add in the soaked rice and water and check for salt, add the coriander and mint leaves and mix well and cook till the rice gets cooked well and serve hot with raita and pickle.
