Ingredients Serving: 6
Chicken cut into medium pieces - 1 kg
100 grams - yogurt
50 to 100 gms - ginger garlic paste
5-6 cups - Basmati rice
Red chillie powder - 2 tsp
turmeric powder - 2 tsp
dhaniya powder - 2 tsp
jeera powder - 2 tsp
Oil as required
Onions - 8 to 10
Tomatoes - 3
Salt to taste
All whole garam masala: (As per taste)
1 tsp - whole cloves
3 to 4 - bay leaves
2 - green cardamom pods
4 - black cardamom pods
1 tsp - black peppercorns
1 or 2 freshly grated - nutmegs
cinnamon sticks - 2
Instructions
Take some oil in a kadai. Fry the onions till golden brown. Place it on paper towel to dry.
In same oil add chopped onions. Sauté it, add ginger-garlic paste. Tomatoes should be added now. On the medium flame stir fry it for sometime.
Add red chili powder, turmeric powder, dhania powder, jeera powder, whole garam masala and salt. Add chicken and let it cook for a while.
Boil some water and add some salt to it. Add in soaked rice and cook it till it's half done. Drain the water from the rice and set it aside.
Put the drained rice on the chicken in the layer pattern, garnish it with coriander, fried onions, and put it for dum by sealing the vessel with atta or dough. Put it on high heat for 10 minutes.
Take a tawa/flat pan and place it on medium flame, place the biryani vessel on the tawa for 30 minutes or till the dough becomes dry.
Open the seal, garnish it with mint, coriander, fired onions and serve the Biryani with raita, onions rings and salad.
