ABOUT Kale and Egg Rice RECIPE

This is a quick and healthy lunchbox recipe which is prepared using Kale leaves, eggs and red pesto sauce.

Ingredients Serving: 2

  1. 1 1/2 Cups Cooked Rice
  2. 2 1/2 Tbsp Red Pesto Sauce ( I have used Jamie Oliver's Brand )
  3. 1 Cup Finely chopped Kale leaves
  4. 3 eggs
  5. Salt to taste
  6. 1 Tbsp Olive oil ( or regular cooking oil )

Instructions

  1. Heat oil in a pan and add eggs.
  2. Scramble them and add the finely chopped kale leaves.
  3. Saute it for a minute and add red pesto sauce along with the required amount of salt.
  4. Add the cooked rice and gently mix well without breaking the rice.
  5. Once done, remove from the flame and serve hot.
