Ingredients to make Corn and Oats Open Sandwich and Sprout Salad

  • For Open Sandwiches-
  • Boiled and finely ground corn kernels 1 cup
  • Oats 1/4 cup
  • cottage cheese/paneer grated 3 tablespoon
  • Chopped coriander leaves 3 tablespoon
  • salt to taste
  • wholewheat bread slices 4-5
  • cornflour 2 tablespoon
  • red chilli powder (Degi Mirch) 1 teaspoon
  • Garam masala 1/2 teaspoon
  • coriander powder 1/2 teaspoon
  • Mozzarella Cheese grated 1/4th cup
  • For Garnish-
  • Italian Seasoning- 1-2 tablespoon
  • For Sprouts Salad-
  • Boiled sprouts 1 cup
  • salt or to taste 1/2 teaspoon
  • chaat masala 1 teaspoon
  • lemon juice 1/2 teaspoon
  • chopped cucumber 3 tablespoon
  • chopped tomatoes 3 tablespoon
  • chopped onions 2 tablespoon
  • Roasted peanuts 2 tablespoon

How to make Corn and Oats Open Sandwich and Sprout Salad

  1. Preheat the oven at grill option at 250 degrees Celsius.
  2. Take 5 wheat bread slices and cut the edges.
  3. Now to prepare the topping: in a bowl mix together- ground corn kernels, paneer, oats, salt, spices and coriander leaves.
  4. Mix them well. (You can keep the ingredients ready a night before or make the topping a night before.)
  5. Now, apply a generous portion on each bread slice. Grate some pizza cheese on top.
  6. Grill this in a baking tray for 5-7 minutes or till done according to your oven temperatures.
  7. Serve or pack in the tiffin with some tomato ketchup.
  8. ForSprouts Salad
  9. I took the ready-made sprouts available at the supermarket.
  10. Pressure cooked them on simmer till two whistles
  11. Drain the water and cool them completely.
  12. You may even prepare this a night before.
  13. In the Morning when packing the lunch box, just mix all the ingredients together and pack them in a leak proof and air -tight tiffin/lunchbox.
