ABOUT Amla Whole Wheat Pop Tarts RECIPE

These Amla Pop tarts are a fun way to sneak in Amla and other healthy 'super foods' like jaggery,almonds,ghee in kids diet. The whole wheat (atta) pastry is not only healthy as compared to the usual Maida ones, but is also super easy to make. Add any seasonal fresh fruit (like figs,strawberries,apples) or dry fruits like (dates,raisins etc) along with the Amla. These super food loaded Amla pop tarts make for a great after school snack

Ingredients Serving: 3

  1. For the Pastry
  2. 1 cup whole wheat flour (atta)
  3. 3 tablespoons fine semolina ( rava)
  4. 1 tablespoon icing sugar
  5. 3 tablespoons ghee
  6. Pinch of salt
  7. For the filling
  8. 1/2 cup grated amla (large variety)
  9. 1/4 cup grated jaggery (amount may change depending on taste or quality of jaggery)
  10. 1 fresh fig ,chopped (or any other fruit/dry fruit)
  11. 1/4 teaspoon clove powder
  12. 1/2 teaspoon all spice powder (or nutmeg/cinnamon/saffron etc)
  13. 1 1/2 -2 tablespoon almond powder
  14. 1 teaspoon ghee
  15. Honey for glaze

Instructions

  1. Whisk the wheat flour,semolina,salt ,icing sugar and ghee in a food processor till it resembles fine bread crumbs.If doing this by hand ,working quickly, rub the mixture with your finger tips so that the ghee blends well with the flour
  2. Add 1-2 tablespoons of cold water to form a stiff but pliable dough.
  3. Cover the dough with cling film and refrigerate for 30 minutes
  4. For the filling: Heat ghee in a pan. Add the amla, jaggery and fig(or any other fruit/dry fruit)
  5. Mix and cook till the mixture becomes dry (about 5 minutes)
  6. Add the spices and almond powder. Mix and cool.
  7. Pre-heat the oven to 180 degree celcius
  8. Line a baking sheet with parchment paper
  9. On a lightly floured work surface roll out the dough into a rectangle about 1/8″ thick
  10. Cut it into smaller approximately 3x4 inch rectangles. (You should get about 20 rectangles after reusing the scraps)
  11. Place about 1 teaspoon filling on the centre of 1 rectangle leaving enough space around to seal it.
  12. Place another rectangle over it and using your fingertips press firmly around the edges to seal the filling.
  13. Use the tines of a fork to seal the edges completely.
  14. Place the pop tart on the baking sheet
  15. Repeat this process with the other rectangles
  16. Prick the top of the pop tarts with a fork, so that the steam can escape.
  17. Brush the tops lightly with honey .
  18. Bake for about 12-15 minutes or till golden brown (timing may change depending on the oven or size of pop tarts)
  19. Cool completely on a wire rack before serving
  20. Store in an airtight container in the refrigerator for upto 2-3 days
