Ingredients Serving: 3

  1. 5 Amla or 1 Cup grated amla
  2. 1 Cup Jaggery
  3. 1 cup water (1/2 cup for cooking Amla and 1/2 cup for making jaggery syrup)
  4. 1/4 Tsp dried Ginger powder (optional)

Instructions

  1. Wash and dry the Amla and grate it.
  2. Place the grated Amla and 1/2 cup of water in a thick bottom pan on medium heat. Let it cook for 5 minutes.
  3. Meanwhile melt Jaggery with 1/2 cup of water in a separate pan. Once it is dissolved, strain the Jaggery syrup with a clean cloth to remove the dirt in it.
  4. Place the Jaggery syrup back on stove. Boil it until you get the thread consistency.
  5. When the thread consistency is reached, add the syrup to the amla. Add ginger powder (if using) and mix it well.
  6. Let it cook on medium low heat until the Leha becomes thick.
  7. Once the Leha becomes thick, turn off the heat and allow it to cool completely.
  8. Once it is cooled, store it in a jar and eat a spoon of Leha every day.
