ABOUT Osaman RECIPE

This is a gujarati dish, best accompaniment for lunch and dinner.

Ingredients Serving: 4

  1. Toor dal/split pigeon peas washed & soaked - 1 cup
  2. Mustard seeds - 1 tsp
  3. Cumin seeds - 1 tsp
  4. Cinnamon powder - a pinch
  5. Jaggery - 1 tbsp
  6. asafoetida - 1 pinch
  7. red chilli powder - 1 tsp
  8. Curry leaves - 10 /12
  9. Dried ginger powder - 1 tsp
  10. Tamarind water 1 tsp or juice of 1/2 lemon
  11. Green chillies - 2
  12. Water - 2 cups
  13. Fresh coriander for garnish
  14. Salt to taste

Instructions

  1. Cook the toor dal in water, strain and keep dal and the water aside.
  2. Heat oil in a deep dish, add mustard seeds, cumin seeds, cinnamon and asafoetida.
  3. After 2 to 3 minutes, add in the cooked dal and the water, bring to a boil.
  4. Add curry leaves, lemon juice, red chili powder, ginger powder, jaggery and green chilies.
  5. Simmer for 3 minutes, taste, adjust salt and spices.
  6. Serve hot and garnish with fresh coriander leaves.
