ABOUT Italian Airfryed Wedges with Cheesy Dip RECIPE

Indian food has always accepted the Chinese Cuisine from the last few decades but our exposure to Italian cuisine was limited and we were all wary to try Italian dishes. Over the last decade we have not only accepted the Italian food but have also started using their spice mix and herbs in our foods. We often find that Italian food and recipes are made in our homes almost every fortnight if not more. When it comes to Evening tea or snacks, we love to have a dip along with the chips/wedges/ fries which we have with our tea. So this simple Italian Airfryed Wedges with cheesy dip takes care of that craving.

Ingredients Serving: 4

  1. Small potatoes - 8
  2. Extra Virgin Oilve Oil - 1 Tbsp or as needed.
  3. Hung Curd - 200gms
  4. Cheese Spread - 100 gms
  5. Clarified butter - 100 gms
  6. Italian Spice & Herbs mix comprising of [Chili powder, Ginger powder, Coriander powder, Cumin powder, Onion powder, Garlic powder, Oregano dry flakes, Dry Thyme flakes, Dehydrated cabbage (optional) dry flakes] - 1 Tbtsp.
  7. Salt - as needed

Instructions

  1. Boil whole potatoes with skin in water.
  2. Allow them to cool down and cut wedges.
  3. Preheat Airfryer on 180 Degrees for 10 mins
  4. Set the temperature on 160 degrees and place the wedges in the basket.
  5. Air fry for 10 mins.
  6. Brush a little extra virgin olive oil and sprinkle some some salt and spice mix
  7. Air-fry for another 10 mins if the wedges are thick and for 5 mins if the wedges are thin.
  8. Remove and plate them as shown. Sprinkle some more salt and Italian Spice n herb mix on it.
  9. In absence of Airfryer, use a pan and shallow fry on high flame to give a crispy hard texture outside but a soft pulp inside.
  10. Take a glass bowl.
  11. Coat the inside of a Glass bowl with Olive oil.
  12. Add the Hung curd, Cheese spread and Butter.
  13. Whisk well till it blends and becomes smooth.
  14. Add the spice and herb mix (you can add fresh very fine chopped onion and garlic if you are going to consume the Dip on the same day) and salt as per need and mix well.
  15. The Dip is ready.
  16. Sprinkle some more of the mix while serving.
  17. Plate as shown and serve to guests and family members.
