Ingredients to make Aviyyal

  • carrot-sliced long (1/4 cup )
  • Beans -sliced long (1/4 cup)
  • Drumstick- sliced long (1/4 cup)
  • Raw banana-sliced long (1/4cup)
  • Yam : sliced long (1/4 cup)
  • White pumpkin-sliced long (1/4 cup)
  • coconut-1/2 cup
  • Green chili-3 no's
  • cumin seeds-2 spoons
  • curd-1 cup
  • curry leaves as required
  • oil -2 spoon
  • mustard-1 spoon
  • salt as required
  • coconut oil-2 spoons

How to make Aviyyal

  1. Cut all the vegetables and boil with salt .
  2. Grind coconut, green chillies and cumin seeds to a fine paste.
  3. Then mix this paste with the vegetables and cook for sometime till mixture coats well with vegetables
  4. Now add curd and salt immediately and turn off the flame .
  5. For tempering Heat oil, fry mustard and curry leaves add with Aviyyal. Add 2 spoons coconut oil on top for flavour.
  6. Serve with rice and Addai
  7. Note - Make sure that after cooking vegetables, it should be dry otherwise Aviyyal becomes watery. After adding curd don't cook for long .
