Ingredients to make Hariyali Raj Kachori.

  • Ingredients for outer cover or kachori -
  • maida 1cup
  • spinach puree 4tbsp
  • oil 2 tbsp
  • salt to taste
  • Ingredients for filling -
  • Green peas boiled 1cup
  • Sauf 1tsp
  • Jeera1tsp
  • ginger garlic paste 1tsp
  • gram flour 2tbsp
  • oil 2 tbsp
  • salt
  • chilli powder 1tsp
  • turmeric powder 1/4tsp
  • coriander powder 1tsp
  • coriander leaves chopped 2tbsp
  • Ingredients for assembling -
  • curd 1cup
  • tamarind chutney 1/2cup
  • Boiled mashed potato 1/2cup
  • pomegranate seeds (optional)

How to make Hariyali Raj Kachori.

  1. First take all ingredients for cover in a bowl except spinach puree mix them
  2. Add spinach puree to it and make a normal dough keep aside for 15 min
  3. Then make little round poories of that dough and deep fry on low flame
  4. It should be crisp
  5. After frying kachori, keep them aside and make filling
  6. For filling add oil to a pan add jeera, sauf and saute
  7. Add green peas, saute little then add add dry spices
  8. Add gram flour, cook for a while add green chilli pieces
  9. Add little water and coriander leaves to it let water dry completely
  10. Filling is ready
  11. For assembling -
  12. First take beaten curd with some coriander leaves for green colour and flavours
  13. Make a hole in the kachori cover put some boiled potato mix inside
  14. Add filling and pour some Tamarind chutney over the filling
  15. Pour curd, pomegranate seeds, salt, chaat masala and serve
