Chocolate Chip Cookie Cake

Ingredients to make Chocolate Chip Cookie Cake

  • 170 grams butter at room temperature
  • 150 grams dark brown sugar
  • 50 grams white sugar
  • 1 egg at room temperature
  • 2 teaspoon vanilla extract
  • 200 grams flour
  • 2 teaspoon cornflour
  • 1 teaspoon baking soda
  • 1 and 1/4 cup dark chocolate chips

How to make Chocolate Chip Cookie Cake

  1. Preheat oven and keep it at 220 degrees, line or grease a 9" pan.
  2. Cream the butter and sugars together until fluffy and light in colour. Add the egg and vanilla, buzz for a minute.
  3. In a separate bowl, mix flour, cornstarch and baking soda. Slowly add the dry ingredients into the wet ingredients.
  4. Dough will be sticky and thick and take time to come together but it will, it is advisable to use your hands.
  5. Fold in chocolate chips. Press the dough into the greased pan and bake for 16-20 minutes or until the edges just start to turn brown.
  6. Let the cookie cool completely in the baking dish, then remove gently.
  7. Add a frosting on top if you wish, it also works well with a scoop of coffee or vanilla ice cream.
  8. Serve warm alongside milk for best taste.
My Tip: This is a deep dish cake and can be cooked in a brownie mould too
