Egg Curry

Ingredients to make Egg Curry

  • 4 boiled eggs
  • oil
  • For the Paste -
  • 2 onions
  • 2 tomatoes
  • 1 tbsp ginger garlic
  • 1 tsp cumin seeds
  • coriander leaves
  • 3 tbsp grated coconut
  • dry masalas -
  • 1/2 tbsp turmeric powder
  • 1 tbsp red chilly powder
  • 2 tbsp coriander powder
  • 1 tsp egg masala
  • 1/2 tbsp Garam masala
  • salt
  • curry leaves

How to make Egg Curry

  1. in a blender, make a fine paste of the ingredients below ( for the paste)
  2. heat oil in a pan and add curry leaves and all the dry masalas
  3. fry it for few seconds and add the ground paste
  4. fry until the masalas raw smell goes away and there is oil in the sides of the gravy
  5. now add salt to taste and put in the eggs
  6. make cuts in the eggs before dropping it into the gravy.
  7. serve hot with plain rice.

My Tip:

use a deep pan. add a generous amount of oil. keep the gravy a little runny.
