ABOUT Potato Khara Curry RECIPE

Potato khara Curry is the quintessential comfort food. When we were young if it was a rainy day or if we were feeling low, potato khara curry with rasam rice would do the magic. A simple dish that does require much skill.

Ingredients Serving: 4

  1. 3-4 large potatoes cut into fine cubes
  2. 1/2 tbsp Mustard seeds and Urad dal for tadka
  3. Salt and chilli powder
  4. Pinch of turmeric
  5. Pinch of asoefatida
  6. 1/4 cup oil

Instructions

  1. Heat a pan and add the oil.
  2. When the oil is hot add mustard seeds and Urad dal.
  3. When it splutters add the chilli powder and turmeric to the oil.
  4. Wash and clean the potatoes. Pat them dry.
  5. Add the potatoes after adding turmeric and pan fry.
  6. Keep the heat low and turn the potatoes sparingly so they turn crispy and do not break.
  7. The potatoes should have a glass like consistency when roasted.
  8. Add salt and turn off the gas.
