Potato Khara Curry

Ingredients to make Potato Khara Curry

  • 3-4 large potatoes cut into fine cubes
  • 1/2 tbsp mustard seeds and Urad dal for tadka
  • Salt and chilli powder
  • Pinch of turmeric
  • Pinch of asoefatida
  • 1/4 cup oil

How to make Potato Khara Curry

  1. Heat a pan and add the oil.
  2. When the oil is hot add mustard seeds and Urad dal.
  3. When it splutters add the chilli powder and turmeric to the oil.
  4. Wash and clean the potatoes. Pat them dry.
  5. Add the potatoes after adding turmeric and pan fry.
  6. Keep the heat low and turn the potatoes sparingly so they turn crispy and do not break.
  7. The potatoes should have a glass like consistency when roasted.
  8. Add salt and turn off the gas.

My Tip:

Slow roasting the potatoes is an art.
