Creamy Avocado Pasta

Ingredients to make Creamy Avocado Pasta

  • A handful of spaghetti per person
  • 2 Ripe avocados
  • A handful of fresh basil leaves
  • Freshly squeezed juice of 1 lime
  • 1/3 cup olive oil
  • 3 pods of garlic
  • salt as per taste
  • Freshly crushed black pepper as per taste
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 5 to 6 cherry tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon freshly grated Parmesan Cheese

How to make Creamy Avocado Pasta

  1. Cook the spaghetti till al dante in a pot of boiling salted water. Once done, drain and keep aside.
  2. Now make the Avocado sauce. Take a blender, add the avocado, salt, pepper, basil leaves, lemon juice. Blend till smooth. Add the olive oil little by little while the motor is still running. Blend till all the oil is added and emulsified.
  3. Take the bell peppers and char them on open flame, peal and thinly slice them. Cut the cherry tomatoes into half.
  4. Heat olive oil in a pan and once hot add the sliced peppers, halved cherry tomatoes, Italian seasoning and a little salt. Cook on high heat for a minute. Set aside.
  5. In a bowl add the pasta, avocado sauce and veggies. Give a good mix.
  6. Serve with some grated Parmesan cheese.
