White Chocolate & Raspberry Semifreddo

Ingredients to make White Chocolate & Raspberry Semifreddo

  • 6 oz finely chopped white chocolate
  • 1 tbls unsalted butter
  • 2 eggs
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 tsp Vanilla Extract
  • 1 1/2 cup chilled heavy whipping cream
  • 1/2 cup Raspberries
  • For Raspberry jelly
  • 1/2 cup Raspberry
  • 1 tbls brown sugar

How to make White Chocolate & Raspberry Semifreddo

  1. To make the raspberry jelly heat the raspberry in small pan with sugar. Cook till you get a little thick consistency.
  2. Pour into small round mold. Freeze it for about 5-6 hours.
  3. For Semifreddo line a metal loaf pan with plastic wrap(leaving about 2 inch overhang). Keep in freezer until further use.
  4. In a bowl set over a pan of hot but not simmering water melt white chocolate, stirring occasionally, and remove bowl from heat.
  5. In another bowl, beat eggs with sugar to combine.
  6. Set bowl over a pan of simmering water and beat again until thick and pale. Continue beating over simmering water for about 3 minutes and remove from heat. Add white chocolate and vanilla extract. Beat again.
  7. In another bowl beat heavy whipping cream until it just holds stiff peak. Fold into egg mixture gently but thoroughly.
  8. Add raspberry in it and fold gently once.
  9. Pour mixture into prepared chilled pan. Cover pan with plastic wrap and freeze semifreddo at least for 6-8 hours.
  10. Unmold semifreddo onto a platter, discarding plastic wrap. Cut into your favorite shape.
  11. Garnish with frozen raspberry jelly on it. Serve and enjoy this amazing dessert today.
