Ingredients Serving: 2

  1. Mutton - 250 gms
  2. Onion chopped -1
  3. Garlic sliced in big pieces - 1 (small pod)
  4. Ginger chopped - 1 inch
  5. Cinnamon stick - 1 stick
  6. Black pepper - 7 to 8
  7. Big caradomn (Badi elaichi) - 1
  8. Ginger garlic paste - 2 tbsp
  9. Oil for cooking
  10. All spices (red chilli coriander turmeric powder)
  11. Kashmiri red chilli powder - 1 tbsp
  12. Chopped tomato - 1
  13. Garlic sauf and jeera powder - 1 tsp
  14. Whisked curd - 2 to 3 tbsp

Instructions

  1. Make powder masala from cinnamon stick, black pepper, big cardamom and keep aside.
  2. Heat oil in wok or pressure cooker, add chopped onions and saute, then add chopped garlic and ginger and chopped tomatoes. Cook them well.
  3. Add all spices and the powder masala to it with a little water and cook till the raw smells goes, add sauf, ginger and jeera powder.
  4. Then add in the washed mutton pieces and mix well in all the masalas, add kashmiri chili and whisked curd, cook till the mutton gets tender.
  5. Optional : You can put some carrot puree for a nice colour for the gravy.
  6. Garnish with chopped ginger, thin pieces and coriander leaves.
  7. Serve hot mutton Rogan Josh with roomali roti, naan or steamed rice.
