Macaroni Soup

Ingredients to make Macaroni Soup

  • 1 small Zucchini cut into bits
  • 2 Tomatoes cubed
  • 1 red Onion finely chopped
  • 3-4 cloves of Garlic minced
  • 1 small Leek sliced
  • 1 bayleaf
  • 2 vegetable Stock cubes
  • 500 ml Water
  • 2 tablespoon Olive oil
  • 50 grams dry Macaroni
  • Fresh ground pepper
  • ½ dry Oregano
  • ½ dry Basil
  • Salt to taste

How to make Macaroni Soup

  1. Heat the olive oil and lightly saute the garlic, leek and red onion, till transparent.
  2. Add the zucchini, tomatoes and the bayleaf, saute for 1-2 minutes, till they begin to soften.
  3. Heat 500 ml water in a saucepan, stir in the vegetable stock cubes to make stock.
  4. Add the hot stock and the macaroni to the vegetable mix, season with freshly ground pepper, salt (if need be, stock cubes are salty) and the herbs.
  5. Cover and simmer for 8-10 minutes or till the macaroni is soft and the vegetables have cooked but are not mushy.
  6. Check seasoning and serve hot with garlic bread.
My Tip: You can use a variety of pastas in this soup, cooking time may vary depending upon the size of the pasta
