ABOUT Broccoli capsicum potato masala RECIPE

This is a great tasting, quick and simple recipe ready within 20 minutes as a healthy dinner side dish. The capsicums add some brightness and sweetness to the masala.

Ingredients Serving: 3

  1. 10 broccoli florets
  2. 1 red capsicum
  3. 1 Potato boiled
  4. 1/4 tsp turmeric powder
  5. 1 tsp sambar powder
  6. 1 tbsp lemon juice
  7. 1 tbsp oil
  8. Salt
  9. For masala paste :
  10. 1 Onion
  11. 2 small tomatoes
  12. 4 garlic cloves
  13. 2 dried red chilly
  14. 1/2 tsp jeera
  15. 1/2 tsp coriander seeds

Instructions

  1. Add diced onions, chopped tomatoes, garlic, jeera, coriander seeds and dried red chilly in big mixer jar.
  2. Grind it to a smooth paste without any water.
  3. In a broad vessel, add 1 cup of water and bring it to a rapid boil. Then add the broccoli florets to it and close it with a lid for 5 minutes. After 5 minutes, drain the water completely and immerse the florets in 1/2 cup of cold water and 5 ice cubes. After, 1 minute strain them in a colander. You can also add the finely chopped stems.
  4. Heat a drop of oil in a kadai and add the capsicums. Toss it for a minute and spread them in a plate. Allow them to cool completely.
  5. In the same kadai add 1 tbsp of oil and add the ground masala paste to it.
  6. Stir it continuously for 5 minutes or the masala becomes semi dry.
  7. Then add the broccoli florets and boiled potatoes. Mix them gently.
  8. After 1 minute add the turmeric powder, sambar powder and required salt.
  9. Add 1/4 cup of water and allow it to boil for 2 minutes. Then add the capsicum pieces and mix them evenly.
  10. After adding capsicum pieces do not keep it long. Switch off the flame and add the lemon juice. Gently mix them and transfer it to a serving bowl. Enjoy this quick dish with roti, poori and dosa.
