ABOUT Stir fried Kothu Parotta RECIPE

Kothu parotta is a famous street food dish which tastes awesome when had piping hot. I experimented making it in a tava and I got the crispy yet moist kothu parotta.

Ingredients Serving: 2

  1. Parotta - 3
  2. Onion(chopped) - 1
  3. Egg - 1
  4. Tomato(chopped) - 1
  5. Ginger garlic paste - 1/2 tsp
  6. Green chilli(chopped) - 1
  7. Red chilli powder - 1 tsp
  8. Fennel powder - 1 tsp
  9. Garam Masala powder - 1/2 tsp
  10. Any meat gravy - 2 tbsp (optional)
  11. Curry leaves (chopped) - 1 tsp
  12. Coriander leaves (chopped) - 1 tsp
  13. Salt as needed
  14. Oil

Instructions

  1. Shred the parotta into small pieces using a knife.If using a spice grinder,just pulse for two times.
  2. Add oil in a tawa and add onion and cook for few seconds.
  3. Add ginger garlic paste.Fry until raw smell disappears.
  4. Add half chopped tomato.Saute for few seconds.
  5. Add the chopped green chilli, salt, red chilli powder and fennel powder.
  6. Break open a egg and scramble it.
  7. Add the shredded parotta and if using meat gravy add it.
  8. Using a sharp spatula, stir fry and pound it occasionally under high heat.
  9. Drizzle in oil when it sticks to the pan.
  10. Add in garam masala, chopped curry leaves, coriander leaves and the remaining chopped tomato.
  11. Stir under high heat for few secs and serve hot with onion raita.

I tried this out with Poha instead of Parotta. I added pepper powder as well. It turned out to be too good!! My friends loved it too... Thank you so much for sharing this recipe!
