ABOUT Vanilla Pannacotta with Black Grape Compote & Cherry Compote RECIPE

Wanted to make a Pannacotta for a long time but also wanted to give it some of my touch. Hence I chose black grapes and Cherries as the surprising element. No one could believe that Black grapes would be so yummy with this desert.

Ingredients Serving: 4

  1. 2 cups - heavy cream
  2. 1 - vanilla bean or Vanilla Essence - 2 tsp
  3. 1/2 cup - sugar
  4. 1 & 1/2 tsp unflavored gelatin (I used Veg Gelatin )
  5. 1/2 cup - milk
  6. 1/2 cup - Thick yogurt
  7. 250 gms - Black Grapes (Seedless)
  8. 250 gms - Cherries
  9. 150 gms - Sugar
  10. Pinch of Salt
  11. Some Water

Instructions

  1. Place the cream in a saucepan. Add Vanilla Essence. add the sugar and bring to a simmer over medium-low heat, stirring occasionally. Do not boil.
  2. Sprinkle the gelatin over the milk in a bowl and let it stand until the gelatin softens, about 5 minutes.
  3. Stir the gelatin mixture into the hot cream mixture until dissolved, then stir in the yogurt.
  4. Now put the mixture in the moulds of your choice. You can set these in beautiful glasses or you can use ramekin moulds. I used a small glass for individual servings.
  5. Now while the Pannacotta is setting in the freezer. We will make the compote for it
  6. Lets take the grapes in a pan and add the sugar, salt and some water and let it boil.
  7. Mash the grapes so that you get a nice pulpy syrup. Keep it at a consistency you like and allow it to come to room temperature.
  8. Same way make the compote for Cherries. (You can make this with any fruit you like, as in : Strawberries, Blue Berries, Pineapple, Apple, Litchis, Kiwi, Plum, etc)
  9. Once the compote comes to the room temperature you either just pour some on top of the Pannacotta and serve immediately or you can add some gelatin to the mix and allow it to set with the Pannocota.
  10. You can set the Pannacotta for 6-8 hours and then garnish it with fresh fruits and compote and enjoy.
  11. You can use anything for garnish it up to your taste and imagination.
