About Noodle Soup Recipe

This veg noodle soup has a light broth and is a very tasty and healthy dish.

Noodle Soup

Ingredients to make Noodle Soup

  • 1 tablespoon olive Oil
  • 1 large red onion cubed
  • 2 spring onions chopped
  • 2 large tomatoes cubed
  • ½ pumpkin cubes
  • ½ cup peas shelled
  • 50 grams mushrooms sliced
  • 3-4 cloves of garlic pounded
  • 60 grams dry noodles
  • 1 teaspoon ginger grated
  • 6 peppercorns
  • 2-3 cloves
  • 2-3 cardamom
  • 450 ml water
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon salt

How to make Noodle Soup

  1. Heat the olive oil, saute the onions, ginger and garlic for a minute or two and add the spices.
  2. Saute for 2 minutes and add the tomatoes, peas and pumpkin, saute for two minutes.
  3. Add half the water, the pepper and salt. Cover and simmer for 10-12 minutes or till the vegetables are soft.
  4. Remove from heat, cool and blend, add the rest of the water, the noodles and the mushrooms, check seasoning and bring to a boil and simmer for another 4-5 minutes, till the noodles soften.
  5. Serve hot with a side of butter toast.

My Tip:

You can make this an oil free recipe by omitting the olive oil, dry sautéing the vegetables in a non stick pan
