Ingredients to make Beguni / Eggplant Fritters/Fried Eggplant

  • egg plant or brinjal 1, cut in thin slices lengthwise
  • besan 1/2 cup
  • coconut powder 2 tbsp
  • Rice flour 2 Tbsp
  • salt as per taste
  • sugar a pinch
  • turmeric powder 1/2 tsp
  • chilli Powder 1/2 tsp
  • Nigella seeds 1/2 tsp
  • hing 1/4 tsp
  • water 140 ml
  • Baking Powder a pinch

How to make Beguni / Eggplant Fritters/Fried Eggplant

  1. Wash and cut brinjal , soak in enough salted water for 15 mins.
  2. Take a bowl and mix rice flour and besan.
  3. Add turmeric powder .
  4. Add chilli powder , salt and sugar.
  5. Also add baking powder and hing.
  6. Now mix water. Take care that no lumps should remain.
  7. Keep aside for 15 mins.
  8. Now heat oil in a small kadai.
  9. Dip the eggplant pieces in the batter.
  10. Now add gently in the hot oil.
  11. Fry for 5 mins in low heat
  12. Flip over.
  13. Fry another side also for 4 to 5 mins.
  14. They will turn red and crispy.
  15. Now serve them with steamed rice.
