Ingredients to make Besan kachori

  • For dough
  • Plain flour 1 1/2 cup
  • Salt a pinch
  • Oil 1-2 tsp
  • Water
  • For Filling
  • Gram flour 1 cup
  • Green chillies 2 chopped
  • Ginger grated 1tsp
  • Red chilli powder 1/2 tsp
  • Salt to taste
  • Chat masala 1/2 tsp
  • Asafoetida a pinch
  • Cumin seeds 1/2 tsp
  • Coriander powder 1tsp
  • For garnish
  • Sev
  • Coriander leaves chopped
  • Tomato ketchup

How to make Besan kachori

  1. Take a bowl. Add flour, salt and oil. Mix well. Add adequate amount of water and knead it. Close it with a lid and keep it aside for 30 minutes.
  2. Take oil in a pan, add cumin, ginger, green chillies and a pinch of asafoetide .
  3. As seeds start to crackle add red chilli powder.Now add gram flour and saute the flour well on medium flame. Cook for 2 minutes .
  4. Add coriander powder, garam masala ,salt and chat masala.
  5. Gram flour starts giving out a nice aroma once it is roasted properly. Take it in a bowl.
  6. Now take the dough and just slightly knead it and divide it. Add 1 tsp of filling and place in its center. Close the ball just slightly and flatten with your hands.
  7. Heat oil and fry kachories on low to medium flame . Take them out and remove excess oil using tissue paper.
  8. Garnish with tomato ketchup and sev. Sprinkle some coriander leaves.

My Tip:

You can even serve with mint chutney and tamarind chutney.
