Palak Tadka

Ingredients to make Palak Tadka

  • spinach 1 bunch washed and clean
  • onion 1 finely chopped
  • ginger 1tsp finely chopped
  • garlic cloves 1 tsp finely chopped
  • green chillies 2 finely chopped
  • oil - 2 tbsp
  • tomato - 1/2 cup finely chopped
  • tamarind- 2 pieces
  • cumin powder - 1/2 tsp
  • coriander powder - 1/2 tsp
  • Garam masala - 1/2 tsp
  • water - 1/2 cup
  • salt - to taste
  • Kasoori methi - 1/2 tsp
  • For garlic Tadka
  • garlic cloves 4 roughly crushed
  • ghee 1 tsp
  • jeera 1 tsp
  • curry leaves 1 tsp
  • Green chilli 1 cut into slit

How to make Palak Tadka

  1. Heat oil in a kadai. Once hot add chopped ginger, garlic,onion and green chilies and saute for a minute.
  2. Now season with some salt. Cook till they become translucent.
  3. Then add chopped spinach and cook for 2 minutes till they get soft.
  4. Let it cool a bit and grind it into smooth puree using little water. Spinach pure is ready.
  5. Heat 1 tbsp of oil in the same kadai. Once hot add tomatoes. Cook till it becomes soft.
  6. Then add cumin powder, coriander powder, garam masala and salt.
  7. Mix it well and cook for minute. Add pureed spinach and water as per your requirement and mix it well.
  8. Let it come to a boil. Once it starts to boil add tamarind and stir gently.
  9. Add kasoori methi and mix. Let simmer for 2-3 minutes. Switch off the gas and keep aside.
  10. Take a tadka pan and add ghee. Once it get hot add jeera, garlic, chilli, curry leaves. Once every thing starts to splutter and cook then add the tadka on palak.
  11. Serve it with roti or steamed rice.

My Tip:

If cooked longer then it will lose its green color. For variation you can add boiled fried potato or fried paneer.
