Carrot spinach pachaddi is called raita. In Gujarati they called pachaddi. It is a side dish but completes your meal. It is very healthy and tasty.

Ingredients Serving: 4

  1. Cucumber 1 cup grated
  2. Carrots 1 cup grated
  3. Plain thick yogurt 1 cup
  4. Green chili 1 small
  5. Coconut 1/4 cup grated
  6. Corinder 2 tbsp chopped
  7. Pinch of sugar
  8. Salt to taste
  9. For tadka-
  10. Oil 1 tsp
  11. Mustard seeds 1/2 tsp

Instructions

  1. Mix fresh scrap coconut and green chili together with two tbsp of yogurt into a smooth paste.
  2. Add grated cucumbers, carrots and coriander with salt and the remaining yogurt in a bowl.
  3. Keep aside and let it sit for a few minutes.
  4. Now add a tbsp of water if you want to thin it out a little more.
  5. In this, add the coconut green chili paste and mix well.
  6. Now prepare the tadka.
  7. Heat oil in a tadka pan and add mustard seeds.When the mustard seeds splutter, turn offheat. Pour on top of pachadi.
