Carrot Spinach pachaddi

Ingredients to make Carrot Spinach pachaddi

  • cucumber 1 cup grated
  • carrots 1 cup grated
  • Plain thick yogurt 1 cup
  • Green chili 1 small
  • coconut 1/4 cup grated
  • Corinder 2 tbsp chopped
  • Pinch of sugar
  • salt to taste
  • For tadka-
  • oil 1 tsp
  • mustard seeds 1/2 tsp

How to make Carrot Spinach pachaddi

  1. Mix fresh scrap coconut and green chili together with two tbsp of yogurt into a smooth paste.
  2. Add grated cucumbers, carrots and coriander with salt and the remaining yogurt in a bowl.
  3. Keep aside and let it sit for a few minutes.
  4. Now add a tbsp of water if you want to thin it out a little more.
  5. In this, add the coconut green chili paste and mix well.
  6. Now prepare the tadka.
  7. Heat oil in a tadka pan and add mustard seeds.When the mustard seeds splutter, turn offheat. Pour on top of pachadi.

My Tip:

If you like you can add chopped onion and in tadka you can add curry leaves also.
