Spaghetti with Meatless Meatballs

Ingredients to make Spaghetti with Meatless Meatballs

  • 200 gm spaghetti
  • 2 teaspoon olive oil
  • 1 teaspoon salt
  • 1 can black beans drained
  • 1 cup bell peppers chopped
  • 1 onion chopped
  • 1 cup bread crumbs
  • 3 garlic cloves chopped
  • 2 teaspoon Italian seasoning
  • teaspoon red chilly flakes
  • 1/4 cup parsley chopped
  • 2 tablespoon olive oil
  • pasta sauce as required
  • parmesan cheese as required
  • pepper to taste
  • salt to taste

How to make Spaghetti with Meatless Meatballs

  1. Boil water in a saucepan,add spaghetti,olive oil and salt.Cook until spaghetti are tender .
  2. Drain , wash under running water in a colander. Drizzle more olive oil, toss well.Set aside.
  3. Heat 1 tbsp olive oil in a pan.Add garlic and onions.Stir and cook until light brown in color.
  4. Add the drained black beans,and bell peppers. Cook for few minutes.Season with salt , pepper,chilly flakes and Italian seasoning.
  5. Let the mixture cool a little.Transfer it in a food processor alongwith bread crumbs and process until smooth mixture forms. Add chopped parsley, mix well.Make 10-12 small round balls .
  6. Smear a saucepan with 1 tbsp olive oil.Fry the balls until light brown from both sides.
  7. Preheat oven to 180 degrees and line a baking tray with parchment paper.
  8. Transfer the roasted balls to the baking tray and bake for 10-15 minutes to get the firmer texture.
  9. Cook pasta sauce for 5-6 minutes in a pan , add the meatballs and mix gently.Remove from heat.
  10. Serve meatballs with sauce topped over cooked spaghetti .
