Healthy Chicken pasta in mix sauce

Ingredients to make Healthy Chicken pasta in mix sauce

  • Penne (preferrably) pasta 400 gms
  • chicken boneless 500 gms
  • onions 2 medium size
  • capsicum 2 medium size
  • Yellow bell pepper 1 medium
  • Red bell pepper 1 medium
  • mushrooms 200 gms (optional)
  • Baby corn 100 gms (optional)
  • olives 6-7 chopped
  • Seasoning like oregano/pizza/rosemary
  • Garlice cloves 7-8
  • Ground black pepper
  • olive oil
  • For the sauce: tomato 3 medium
  • Garlic cloves 8-10
  • peppercorns 6-7
  • butter 2 tbsp
  • wheat flour 90-120 gms
  • chilli powder 1 tsp
  • sugar 1 tsp
  • cream/milk 100 gms

How to make Healthy Chicken pasta in mix sauce

  1. Chop onions, capsicum, red and yellow bell pepper in square shape. Cut mushrooms and babycorn in pieces.
  2. For the tomato sauce, just dryroast the tomatoes and garlic on gas top, once the tomatoes are done, peel them and grind the tomatoes, garlic, peppercorns and salt and make a puree.
  3. Now in a pan, add butter, chilli powder, tomato puree that we made in above step, add salt , sugar and seasoning and let it cook for sometime.
  4. In a wok, add olive oil and add chopped garlic. Once garlic is done, add the washed boneless chicken.
  5. Now add this tomato sauce( you can also add readymade tomato sauce if you wish) and seasoning to the chicken and let it cook covered on low flame
  6. In another vessel, boil water for cooking pasta. Water must be double or more than the amount of pasta.
  7. Add little salt and 1 tsp olive oil to the water. Once water is boiling add the pasta.
  8. Make sure the pasta is cooked aldante(not completely cooked). Timing for cooking is mentioned on the pasta pack.
  9. In the meantime while chicken and pasta are getting ready, cook the veggies. Add olive oil in a wok, add all the veggies and on high flame, while stirring, just cook the veggies so that they are still crunchy. Add salt and seasoning.
  10. Once the veggies are done, keep aside and prepare the creamy sauce. Take a pan and add butter, add the wheat flour and stir.
  11. Once the flour is roasted in butter, add cream or milk while stirring continuously so that there are no lumps. Add the tomato sauce that we made and seasoning. Add salt. You can add milk/water to get the required creamy consistency.
  12. Once our creamy sauce is ready, mix the pasta and the veggies and the cooked chicken and pour our creamy sauce and tomato sauce that we made and olives, mix all of these together. Tadaa!!! Your creamy, delicious, healthy pasta is ready. Sprinkle ground pepper or chilli flakes according to your liking. Serve hot.

My Tip:

Use a fork for stirring and breaking the lumps in the creamy sauce. Add different exotic colourful veggies to make it healthy and look beautiful.
