ABOUT Ridge gourd Bajji RECIPE

Sliced Ridge gourd dipped in Gram Flour Batter and deep fried makes a delicious evening snack. The sweetness of Ridge gourd really enhances the taste.

Ingredients Serving: 4

  1. Ridge Gourd : 1 Medium Sized
  2. Besan (Gram Flour) : 1.5 Cups
  3. Cumin Seeds : 1 Spoon
  4. Chilli Powder : 1.5 tbsp.
  5. Turmeric : A pinch
  6. Baking Soda : A pinch
  7. Salt : To taste
  8. Oil : for frying

Instructions

  1. Wash the ridge gourd, cut a small portion of it and check for bitterness.
  2. Cut the ridge gourd into thin slices without peeling the outer skin.
  3. In a mixing bowl add in Gram Flour, Cumin Seeds, Chilli powder, Turmeric, Baking Soda, Salt and mix well by adding water little by little. The consistency should be slightly thicker than the dosa batter . Keep it aside for 10-15 mins
  4. Heat oil in a pan and once it is smoky hot put few drops of this hot oil into the batter and mix well.
  5. Now dip the ridge gourd slices into the batter, so that they are completely coated with the batter and drop them in hot oil.
  6. Deep fry until they are golden brown.
  7. Taken them out and place on absorbent paper to absorb the excess oil.
  8. Serve hot with any chutney or Tomato Ketchup.
