Ingredients to make Urad Dal Kachori

  • For dough -
  • 1 cup maida
  • salt
  • little more than 1/4 cup hot oil
  • 1/4 tsp cooking soda
  • water
  • for stuffing -
  • 3/4 cup urad dal
  • oil
  • 1 tbsp crushed fennel seeds
  • 1 tbsp crushed coriander seeds
  • 1 tsp red chilly powder
  • 2 tsp coriander powder
  • 1 tsp amchur powder
  • 2 tbsp gram flour
  • salt

How to make Urad Dal Kachori

  1. soak the urad dal in hot water for 1 and 1/2 hour
  2. dough preparation - in a bowl add flour, soda, salt, mix it . now add hot oil and combine the flour. after this, add water in small quantity and form a slightly soft dough. allow this to rest for 1/2 an hour
  3. boil the soaked urad dal for 1/2 hour until it is 90% soft(slightly crush it in the blender after it is cooked),
  4. In a pan, heat some oil and add crushed fennel seeds, crushed coriander seeds, red chilly powder, coriander powder, amchur powder , salt and the cooked dal
  5. fry this mixture until it reaches a powder texture, then add 2 tbsp of gram flour and fry it on a high heat and turn off the flame
  6. allow this mixture to cool.
  7. now take small portions of the dough that was resting, and make balls and roll it out into small thick puris.
  8. fill these puris with the filling and close it properly and flatten the dough.
  9. heat oil in a pan to deep fry the kachoris, fry the kackoris on a medium flame until it turns golden colour
  10. soft crispy kachoris are ready to be served.

My Tip:

heat oil on medium flame. the dough must be moist, hence use good amount check the seasoning of the filling and make changes as per your taste do not serve the kachoris straight out of the oil. let it rest for some time and then serve, which will enhance its taste and texture serve it with finely chopped onions and sweet chutney keep pouring oil on the kachoris while they are frying and keep moving them
