Ingredients to make Mawa Cupcakes (From leftovers of butter)

  • The leftovers of butter after removing ghee 100 gm
  • maida 60gm
  • wheat flour 60 gm
  • Sunflower oil 3 tbs
  • The leftover butter milk 60 ml
  • Normal sugar or brown sugar 60 gm
  • cardamom powder 1 tsp
  • nutmeg powder 1/8 tsp
  • mawa essences 1 tsp
  • Baking Powder 1 Tsp
  • cooking soda 1/2 Tsp
  • salt 1/8 tsp

How to make Mawa Cupcakes (From leftovers of butter)

  1. Break the leftover butter after removing ghee till it resembles bread crumba. We will now call it bari.
  2. Put paper cupcake liners in cup cake moulds.
  3. Preheat oven at 170 degrees C
  4. In a bowl mix the leftover buttermilk or you can use normal curd and sugar. Mix sugar
  5. Add baking powder and cooking soda and cover the bowl for 1 minute
  6. You will see the baking powder and soda bubbling
  7. Now add all dry ingredients like the bari, maida, wheat flour, cardamom powder, nutmeg powder, salt, mawa essence , 2 tbs oil in the batter. Add butter milk or water to adjust consistency.
  8. Add 1 tbsp water and remaining 1 tbs of oil in one bowl mix it well add in the cake batter. Now mix with spatula , cut and fold. Do not over mix.
  9. Put the batter in cupcake moulds with ice cream scooper and keep the tray in pre heated oven for 25 minutes.
  10. Let the cup cakes be in the oven for 3-4 minutes
  11. You will see your house is filled with the sweet fragrance of Mawa cake. Best option for tea time snacks

My Tip:

Do not over cook the butter while making ghee. The bari should be brown not black. If it is burned do not use it. Even the brown bari can be used in punjabi sabji also.
