Mutton Shammi Kebab

Ingredients to make Mutton Shammi Kebab

  • Ingredient list 1
  • Mutton - 300 gm
  • split chick peas/Channa dhal - 1/3 cup
  • bay leaf - 1
  • cardamom - 2
  • coriander Seeds - 2 tsp
  • cumin - 1 tsp
  • ginger - 1 small piece
  • garlic - 3 cloves
  • peppercorns - 1 tsp
  • cinnamon- 1 (2"stick)
  • cloves - 2
  • salt
  • egg(beaten) - 1
  • red chilli flakes - 2 tsp
  • onion(chopped) - 1
  • coriander leaves,mint leaves - 1/2 cup

How to make Mutton Shammi Kebab

  1. Wash channa dhal and soak it for one hour.
  2. Wash mutton and pressure cook it along with everything in list1 for 3 whistles by adding a little water.
  3. Open after the pressure settles on its own.If there is any water left, heat on high for the water to dry up.
  4. Allow it to cool and then blend it to a smooth paste in a blender.
  5. Add finely chopped onion,coriander and mint leaves.Add chilli flakes to your desired taste Beat one egg with salt.Add slowly the egg into the mixture until the desired consistency is attained I just poured half of the egg mixture.
  6. Shallow fry in medium heat until the color changes to golden brown.
  7. Serve with your favourite dip.

My Tip:

The consistency should not be too dry or too wet.The right  consistency to form patties and hold shape. If it is too dry it may scatter while frying.Add more egg to form the right consistency. If it is too loose it may be soak up oil.Add besan flour to adjust the consistency.
