Ingredients Serving: 4

  1. I cup soaked green gram or fresh hara chana
  2. 1 cup besan/ chick pea flour
  3. 2-3 tbsp semolina/ sooji
  4. Salt to taste
  5. Few chopped green chillies
  6. 1 small onion- grated
  7. 1 inch ginger, grated
  8. 1/4 - 1/2 tsp ajwain seeds
  9. Warm water to make a thick batter
  10. Oil to shallow fry the bhabras. Mustard oil is preferred for the authentic taste, but I've used sunflower oil.

Instructions

  1. Take the green chana in a bowl. Add the besan, sooji, green chillies, ajwain, grated onion, ginger & salt to taste. Mix well.
  2. Pour some hot water & make a thick-ish batter. You can check for seasoning at this point.
  3. Heat some oil in a pan. With the help of your fingers, put some (about a ladle full) into the pan, spraed a little & fry. You may use a ladle but this is mostly done by hand as it is a thick batter.
  4. Flip over when one side is golden brown as you do with cutlets/ chillas. Fry the other side too.
  5. When both sides are golden brown & its thoroughly cooked, take it out on a tissue to drain excess oil .
  6. Serve hot/warm with tomato chutney ( made by grated tomatoes,garlic & chopped green chillies) or green chutney or ketchup, whatever you prefer. Enjoy!
