Pineapple Mousse

Ingredients to make Pineapple Mousse

  • 200g milkmaid
  • 1/2 cup tinned pineapple syrup
  • 5-6 drops yellow food colour
  • 5-6 drops pineapple essence
  • 2 tsp gelatin soaked in water
  • 1/2 tsp lemon Juice
  • 1/2 chopped tinned pineapple peices
  • 250g sweetened whipping cream
  • For garnishing
  • Whipped cream
  • Tinned cherry
  • Tinned pineapple slice ( cut into quater)

How to make Pineapple Mousse

  1. In a bowl add milkmaid, tinned pineapple pieces, tinned pineapple syrup, mix well
  2. Now add yellow food colour and pineapple essence
  3. Melt the bloomed gelatin in double boiler and add it to the mousse, mix well
  4. Blend the whipping cream using electric beater till firm peaks are formed
  5. Now fold half of whipped cream slowly into the mousse so that it blends well. If required blend it with electric beater just for 2 mins. Fill rest of the whipped cream in piping bag
  6. To assemble the mousse take a stem glass. Fill 3/4 of the glass with mousse and allow it to refrigerate in fridge for 1-2 hours
  7. At the time of serving pipe out the whipped cream using star nozzle on the top of pineapple mousse (as show in pic). Garnish it with a tinned cherry on the peak of whipped cream and a slice of tinned pineapple (cut into quarters)Enjoy
