Cranberry Pistachio Biscotti

Ingredients to make Cranberry Pistachio Biscotti

  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla
  • 1/2 tsp baking powder
  • A pinch salt
  • 120 gms all purpose flour
  • 30 gms unsalted pistachio
  • 30 gms dried cranberries

How to make Cranberry Pistachio Biscotti

  1. Preheat the oven at 170 degree C for 10 mins.
  2. In bowl whisk eggs till it's nice and creamy.
  3. Then add sugar , vanilla and beat again till it's thick and glossy.
  4. Slowly add in flour and baking powder and mix well.
  5. Next add in dried cranberries and pistachio and incorporate till well combined.
  6. Remove this in a flour dusted counter top and knead till it forms a dough.
  7. Shape it in a form of log and flatten it a bit.
  8. Bake this for 25 mins and then cool it for 10 mins.
  9. After 10 mins slice the biscotti and bake again for 8-10 mins both sides.
  10. Let it cool completely and then store it in a airtight container.
