ABOUT Junglee Maas RECIPE

Junglee Mass is a very rustic mutton curry cooked in a traditional Rajasthani style. This dish was prepared by the hunters with a minimum of spices.

Ingredients Serving: 4

  1. 500 gms mutton on bones
  2. 1/2 cup olive oil
  3. 1 tbsp Ghee
  4. 1 cinnamon stick
  5. 2 green cardamoms
  6. 4 cloves
  7. Salt to taste
  8. 15 dry red chilies, broken
  9. 4-5 garlic cloves, sliced
  10. 1 ginger, chopped
  11. 1 tbsp kashmiri red chili powder
  12. 1 tbsp tomato paste
  13. 1 tbsp lime juice

Instructions

  1. Heat oil and ghee. Temper with the whole garam masala. Saute for a few seconds. Add the mutton and fry on a low flame till lightly browned.
  2. Add the garlic, ginger, red chilies and salt. Mix well. Cover and simmer on a very low flame for almost 90 minutes or till done.
  3. Keep sprinkling water at intervals. When almost done add the red chili powder and tomato paste mixed with 1 tbsp. water.
  4. Give it a stir and continue to simmer for another 4-5 minutes. Add lime juice to the end product and serve with either chapattis or rice.
