ABOUT Guava Cheese/Perad RECIPE

Guava cheese /perad or guava sweet is a very delicious sweet made from Guava and Sugar It is soft and chewy fudge like sweet

Ingredients Serving: 8

  1. Guava (big) riped 4 to 5
  2. Sugar 2 cups
  3. Lime juice 1tbsp
  4. 1 tbsp butter/ghee
  5. 2 -3 drops of pink colour

Instructions

  1. Wash the guava well and boil them in a pressure cooker for 2 whistles or in a vessel until soft .
  2. Cut them,scoop the seeds. Mash the pulp, or grind it to a pulp using your mixer/grinder .
  3. Boil the seeds with 1/2 cup water and grind it too.
  4. Weigh the pulp ,you need exactly the same amount of sugar ,if you get 2 cups pulp we need 2 cups sugar
  5. In a non stick pan or a thick bottomed vessel put the pulp and the sugar .
  6. Cook on low flame ,stirring with a wooden spoon .
  7. Once it begins to bubble add lime juice , few drops of colour and ghee/butter .
  8. Keep stirring constantly you will see that the mixture beings to thicken .
  9. To test if it's done drop a small drop of mixture in a bowl filled with cold water if the mixture disintegrates means it still needs to cook .
  10. Keep stirring till it gets thick and begins to stick to the spoon .
  11. Test the mixture again by dropping it in another glass of cold water ,if it forms a ball the mixture is ready.
  12. Remove the mixture on a well greased thali and spread with the spatula .
  13. Allow it to cool for 4-5 hours and then cut it into diamond or square shape
