Earthquake Cookies

Ingredients to make Earthquake Cookies

  • Unsalted Butter 125 grams (softened and cubed)
  • Soft Brown Sugar 2 cups
  • vanilla essence 1tsp
  • Eggs 2
  • Dark Chocolate 60 grams
  • Milk 80 ml
  • plain flour 2 3/4 cup
  • Cocoa Powder 2 tbsp
  • Baking Powder 1 tsp
  • Icing Sugar for coating

How to make Earthquake Cookies

  1. Beat the butter, sugar and vanilla essence until light and creamy.
  2. Add in one egg at a time and mix well.
  3. Stir in the chocolate and milk.
  4. Sift in all the dry ingredients and mix well.
  5. Refrigerate the mix for 3 hours to overnight.
  6. Line two baking sheet with parchment paper.
  7. Preheat the oven at 180C. Roll ½ tbsp full of mixture into balls and roll in icing sugar and place on the baking sheets 2” apart.
  8. Bake for 20-25 minutes.
  9. Cool completely.
