Gingerbread Biscotti

Ingredients to make Gingerbread Biscotti

  • flour 120gm
  • egg - 1
  • Dark brown sugar - 80 gm
  • butter - 50gm
  • ginger powder - 1 teaspoon
  • cinnamon powder - 1 1/2 teaspoon
  • All spice - 1 1/2 teaspoon
  • clove powder - 1/4 teaspoon
  • nutmeg powder - 1/2 teaspoon
  • chopped hazelnut - 25gm
  • Chopped candied orange peel - 20gm
  • dry cranberries - 25gm
  • white chocolate chips - 25gm
  • Baking Powder - 1 teaspoon
  • egg wash: egg -1
  • brown sugar - 2 tablespoon (sprinkling)

How to make Gingerbread Biscotti

  1. Preheat the oven to 180 degrees celsius. In a large bowl, cream the butter and bown sugar. Add and beat it the egg.
  2. Sift the flour, gingerbread spice and baking powder in the wet mix. Mix well. Fold in the chopped nuts and fruit bits until completely incorporated.
  3. Shape the dough like a fat log on the cookie sheet lined with parchement sheet.
  4. Whisk the second egg and apply it on the log, using a pastry brush. Sprinkle the dark brown sugar for the extra crunch!
  5. Bake for about 40 minutes. Once baked, take it out and slice it into smaller slices.
  6. Bake again for 10 minutes on each side.
  7. Once its double baked, let it cool on the cooling rack!
  8. You can drizzle some melted chocolate or even dip an end in the melted chocolate! (optional)
