  1. 1 1/2 cups - flour
  2. 1/2 tsp. - baking powder
  3. 1 tsp. - baking soda
  4. 1/2 tsp. - salt
  5. 1/2 tsp. - cinnamon
  6. 1/4 tsp. - nutmeg
  7. 1 tbsp. - instant espresso powder
  8. 1 cup - Sugar
  9. 1/4 cup - vegetable oil
  10. 1/2 cup - milk
  11. 1/2 cup - coffee
  12. 1 egg
  13. 1 tsp. - vanilla

Instructions

  1. Preheat your oven to 180 degree C. Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, espresso powder and sugar in a mixing bowl and set aside.
  2. Vigorously whisk the oil, milk, coffee, egg and vanilla together in a large bowl. Slowly add the flour mixture to the egg-coffee mixture and mix to combine. Do not over mix the batter.
  3. Pour the batter into a lined cupcake pan and bake the cupcakes for about 15 - 22 minutes, or until a toothpick comes out clean.
  4. Allow the cupcakes to cool completely before you frost. Dust with cocoa powder and enjoy.
