Ingredients to make Pumpkin Cupcakes With Pineapple Frosting

  • Flour (maida) - 1.5 cup (this can be replaced with wheat flour for healthier option)
  • butter - 1/2 cup
  • sugar - 1 cup
  • Eggs - 2 (instead of eggs, 1 cup of yoghurt can be used for eggless version)
  • Baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • cinnamon powder - 1 tsp
  • Ground ginger - 1/4th tsp
  • pumpkin puree - 3/4 th cup
  • Vanilla extract - 1 tsp
  • pineapple frosting :
  • butter - 1/2 cup
  • Icing sugar - 2 cups
  • Fresh cream - 2 tbsp
  • pineapple essence - 1/2 tsp

How to make Pumpkin Cupcakes With Pineapple Frosting

  1. Sieve the flour, baking powder, baking soda, ground cinnamon and ground ginger together. Keep aside.
  2. Whisk the butter and sugar together till fluffy.
  3. Now add the eggs one by one, and vanilla extract. Whisk for few more minutes.
  4. Now fold in the flour into the egg batter and pumpkin puree in 2 parts.
  5. Pour the batter into a muffin tray lined with muffin liners.
  6. Bake at 165-170 degrees C, in a preheated oven for 18 minutes or till a tooth pick comes out clean.
  7. Whisk the butter, till its fluffy.
  8. Now add the icing sugar into it and whisk together.
  9. Add the cream, pineapple essence into the icing and whisk.
  10. Pipe onto the cold cupcakes.
