Ingredients to make Methi Matar Pulav

  • rice 1 cup
  • onion 1 medium
  • methi leaves washed and chopped 1/2 cup
  • Spring garlic along with its greens 2 teaspoon
  • green chillies chopped 1/2 teaspoon
  • potato peeled and cubed 1 medium
  • cauliflower florets 1 cup
  • peas shelled 1/2 cup
  • cumin seeds 1 teaspoon
  • turmeric powder 1/2 teaspoon
  • red chilly powder 1/4 teaspoon
  • salt as per taste
  • oil 1 tablespoon
  • Water for boiling

How to make Methi Matar Pulav

  1. Soak rice for half an hour. Wash drain and keep aside. Chop all veggies. Cauliflower florets should be big in size.
  2. In a heavy bottomed pan add oil. Let it heat. Add cumin seeds. Let them splutter.
  3. Add chopped onion. Saute it till it becomes translucent on medium flame. Add methi and spring garlic. Saute well.
  4. Add turmeric powder and red chilly powder. Saute. Add all the vegetables. Saute for a minute.
  5. Add water a little more than 2 cups to cook the rice. Let it come to a boil. Add salt as per taste.
  6. Lastly add rice. Lower the flame. Cover with lid little opened. Let the rice cook.
  7. Serve hot with papad and curd or raita.

My Tip:

If spring garlic is not available then 2 garlic cloves pressed can be added.
