Ingredients to make Orange And Carrot Burfi

  • carrot grated- 3 1/2 cup
  • coconut, grated - 2 cups
  • Orange Juice-1/4 cup
  • sugar - 2 cups or according to taste
  • cardamom - 2 tsp powdered
  • ghee - 1/2 cup

How to make Orange And Carrot Burfi

  1. In a heavy bottomed pan add ghee. Once it is little hot, add coconut and carrot to it.
  2. Fry until the raw smell of carrot goes away and becomes fragrant. Now add orange juice and stir for few minuteas till it is well combined.
  3. Keep a greased tray ready now add sugar and keep mixing.
  4. The mixture will start bubbling (it gives the burfi crispness once its done) keep the flame medium always and keep stirring.
  5. After sometime, the mixture will start leaving the pan and become thick.
  6. Also, the ghee will start to ooze from the mixture. It will be frothy
  7. Add powdered cardamom at last. Pour in the greased tray.
  8. Let it become little warm.Cut using a sharp spatula or knife and make squares and let it rest for 30 min and serve later.

My Tip:

This burfi needs to be cooked longer so that it sets well.
