Oats Coconut Cranberry Cookies

Ingredients to make Oats Coconut Cranberry Cookies

  • Oats 1/2 cup
  • amaranth flour 1/2 cup
  • semolina 1/4 cup
  • Desiccated coconut 1/4 cup
  • sugar 1/4 cup
  • butter 1/4 cup
  • Dried cranberries 1/8 cup
  • Baking powder 1/2 teaspoon
  • Milk as required

How to make Oats Coconut Cranberry Cookies

  1. Grind the oats
  2. Mix oats, amaranth flour, semolina, desiccated coconut with baking powder and keep aside.
  3. Cream the butter and sugar well
  4. Add the dry ingredients to the butter and sugar mixture.
  5. Add roughly chopped cranberries and bring the dough together. Don't knead.
  6. Add a tablespoon of milk if it is too dry.
  7. Keep the dough covered for 10 minutes.
  8. Roll out the dough of medium thickness. Cut with a cookie cutter
  9. Place on baking and bake at 180 degrees for 15-20 minutes till it's done. Baking time varies as per oven

My Tip:

Raisins, currants or prunes can be added instead of cranberries
