Almond Pepper Green Tea Fudge

Ingredients to make Almond Pepper Green Tea Fudge

  • almonds 1/2 kg
  • ghee 1/2cup
  • Black pepper 1 Tbsp
  • cloves 8-10 pieces
  • Dark rum 1/2cup
  • Instant kahwa mix 1tbsp
  • Light Brown sugar 1 1/2cups

How to make Almond Pepper Green Tea Fudge

  1. Soak the almonds for 4 1/2 hours in warm water
  2. I generally don't peel the soaked almonds but if you like you may peel them off.
  3. Now grind these soaked almonds with peppercorns and cloves into a grainy powder.
  4. Heat up the ghee in a shallow pan and start roasting the mixture on medium heat.
  5. Slow roasting is needed for a great taste so please don't forget to take a non-sticky pan. I took a ceramic coated pan.
  6. Roast it till the ghee comes up or it changes it's colour to brown
  7. Add brown sugar and mix well .
  8. Remove the pan and leave to cool
  9. Finally add dark rum and instant kahwa mix as it already contains saffron, green tea matcha and cardamom powder.
  10. Let it set in a cake pan for 1 hour.

My Tip:

You may drain off extra ghee from the cake pan while setting this fudge.
